Just as the Red-Tailed hawk drifts over it's prey, the Guatemalan coffee glides smoothly over your palate, as you experience the delicious, roasted flavor of these top-grade beans. In Memory of Dave Ruhl, Firefighter

Dave Ruhl loved the Guatemalan Dark Roast coffee. It was his preference of the Guatemalan that challenged me to roast it darker. No matter how many specialty coffees Dave tried, in his quiet way, he would insist the Guatemalan was the best. We will continue to use the name “Super Dave’s Fire Brew” in memory of Dave.

Out of Stock as of 2/27/18. El Salvador Pacamara (This is a high grade speciality coffee) Limited Supply until April 2018.

This is a specialty coffee, and well worth the little extra. I can only get it in July or August. Once it is gone, I have to wait another year. The Pacamara bean is a hybrid strain of Arabica known for its very large and sweet bean. This particular crop came from Santa Leticia, home of the Maya philosophers. It is considered to be one of the best areas for cultivating coffee in Central American, because of its rich volcanic soil. The Pacamara is rich and sweet with a creamy body, very balanced. It sometimes has a hint of molasses undertone and a tangerine like acidity. If you roast it light, it will have an earthy taste. A medium to full city roast will give you the sweetness. I like it both light and dark. It’s fun to roast this both ways and mix it a checkerboard blend.

After I tested the Colombian and Guatemalan, I wondered if I dare try a three-blender. What would it be like if I added Sumatra to the mix? After several attempts over a period of two weeks, I have found the correct blending ratio and degree of roast for each one. Roast the Colombian to a Full City, just before the 2nd crack. I then roast the Sumatra to a Full City. The Guatemalan I take to a light Vienna, but just barely. I hear one tiny snap of the second crack and I hit the cool down. I let these beans sit in a sealed container for 24 hours. Now you have a coffee that is bright and fruity, with a slight earthy taste, and a sweet and clean well-balanced cup. There are so many subtle differences in this blend that it is difficult to pass up!

The rich, bold taste of Sumatra. A very complex coffee bean. At first sip, you notice there is no heavy taste and it has a crisp acidity that is the heart of the coffee. It is a full bodied coffee which can be used in a blend or by itself. This Indonesian coffee will always roast slightly uneven. It can be roasted at a medium roast, which accentuates the complexity and brings out all the different flavors of the bean; yet remains a smooth cup of coffee. Or, this can be an excellent French Roast. I have only roasted it to a Full City+. Either way, you are bound to love the intriguing Sumatra “cup of Joe”.

This last coffee blend, is a well-rounded flavor coffee (Guatemalan) mixed with a clean and crisp, full-bodied coffee (Sumatra). You can have both of these roasted as a Full City+, or give off the smokey taste of Guatemalan by roasting it as close to Vienna as possible. I prefer both roasted a Full City+. I’ve not tried the Guatemalan at a lighter roast, and mixed that with the Full City+ Sumatra roast, but that might be my next venture. Either way, this is another great, well-balanced cup of coffee.
