We have seven different types of coffee. Guatemala and Sumatra - roasted Full City. Oh, the smell is just like rich chocolate. I call this coffee Roaring Falls or Sophia “The Wisdom of God”. It delivers the roaring taste of rich, dark chocolate!
Our next famous coffee is Colombian and Sumatra blended together - called Audacious or ABIR “Mighty One”. This is an exceptional tasting coffee. A favorite of many when I make my syrup coffee in a “Toddy Maker”. Some enjoy the smoked flavor of a French roast, so I have roasted the Sumatra where it has a tiny film of oil on the bean, then roast the Colombian a lighter roast. Blend these two and you have a good cup of java! You can also have this blend reversed and get an entirely different taste by using 60% Colombian and 40% Sumatra.
Our son, Corey, likes Peru and Guatemalan. It’s name is Tranquility or EYALUTH “Strength”. This smooth coffee both has strength and a calming factor. The first taste makes you wonder if it’s what Heaven is like. One can sit with a cup of this in hand all day.
Another favorite of many is Reflection or TSUR “God our Rock.” It is a blend of Honduras and Colombian. Honduras is roasted a lighter roast, while Colombian is roasted a medium roast. As I dwell on this particular coffee, I think of my grandson, Koen, as he was walking on the banks of a little stream in the heart of the Black Hills. He noticed his reflection in the water and then saw the trees and blue sky reflecting in the stream, and was in awe of God’s beauty around him. It is a time to sit back with a good cup of java and meditate on the wonderful life God gave us.
Once again, both from South America, we have Peru and Bolivian. Peru is a light roast mixed with the Bolivian, medium roast. A unique blend of coffees that lift your spirits with a taste of nuts, cinnamon spice, and “smoked” chocolate. A great cup for after dinner. This favorite of mine I named Everlasting Creation or EL-OLAM “Everlasting God”.
Next is The Foundation or EL ROI “God of Seeing”. This is the cream of the crop of Colombian coffee, the Colombian Supremo bean. It is a combination of a medium roast and a light roast, so it is a checkerboard style. Delicious! Wonderful for a morning cup of java.
Our last coffee is The Light or SOTER “Savior”. This blend is Guatemala and Colombian beans. The Guatemala beans are roasted a medium, while the Colombian beans are roasted a medium light. The exceptional taste is unique with the wonderful sweet flavor of a medium roasted Guatemalan bean, with a hint of chocolate. Add the smooth, crisp, full bodied taste of Colombian Supremo and you have one fabulous cup of Kaffee!

Remember, coffee is best when it’s fresh roasted and freshly ground. Keep it in an airtight container and the flavor will last for approximately 7 days.

The Sumatra and Peru beans are the finest grade of beans you can buy. Peru is a Fair Trade Organic bean, a very mellow, sweet tasting coffee. I roast my peru beans 1 minute into their first crack. This is basically a City Light roast. Let it go further and you have a slightly burnt taste with the Peru.
The sumatra is another excellent coffee. Many like the sumatra as a French Roast, but I like to roast mine at a Full City+. I’ve learned my roaster’s first cracks quit for about 20 seconds before the 2nd crack, so I wait until the smoke starts and I can almost bet within two seconds the 2nd crack begins. Naturally it depends on the type of bean, also. The second cracks are fast and furious so you have to be ready to hit that cool down button the second you hear the first snap of the second crack. It will continue to snap and pop quickly for the next 45 seconds before it slowly recedes.
Another favorite of mine is Colombian Supremo and Guatemalan. The Guatemalan Antigua, if roasted slightly darker (Full City+) gives off a chocolate, subdued taste. Add the wonderful Colombian Arabica Supremo beans and you have a full-bodied, rich flavor. I usually roast this a lighter roast. Love that clean, crisp taste of Colombian.
